I haven't done a blog post in some time...I've been on a taco dip and swimming kick with little to no room for much else. I have been going through the summer feels and trying to spend as much time with my kiddos as possible. They are hilarious and fun, also the coolest people I know.
I finally found some inspiration for real clean foods again when I realized my shorts didn't fit me and I had to lay off the chips and dips for awhile. This menu is perfect for meal prep and includes tons of wonderful vegetables and plant-based options. The lentil meatballs are so simple and so satisfying...I am going to go eat one right now!!

I made the chili for my hubby. I’m freezing it so he has food while I’m out of town next week. Otherwise he will just eat hamburgers and pizza everyday.
We are working on a ton of new things over here at Simple Eats headquarters...AKA my bedroom/office:) I plan on having a cookbook out by the holidays, new videos for you to follow along with us in the kitchen, and some all natural cleaning stuff available for purchase on the site.
